The number one requested dish at our church potlucks is Barbecued Meatballs. Our dear friends and fellow ranchers, Scott and Linda Ambo, use to make this famous dish for every church potluck. Sadly, they moved away a couple of years ago leaving a great void of not only missing our close friends, but Linda’s famous meatballs as well. My mom decided to fill the void and has taken up the task of making our church’s favorite dish so it can be present once again at every church potluck, reminding our church body to pray for our sweet friends who we all greatly miss. The Ambos will always be a part of our church family even though they live miles away. This dish has been a family favorite for a long time now as Linda gave the recipe to my mom when I was little. It is requested for favorite Birthday dinners among the grand kids and adults alike. This is a great recipe to use up the ground beef in your freezer!
The ingredients you will need for the meatballs are:
- 3 lbs Ground Beef
- 1 (11 oz.) can Evaporated Milk
- 1 cup Oatmeal
- 2 Eggs
- 1 cup Cracker Crumbs
- 1/2 cup Chopped Onion
- 1/2 tsp. Garlic Powder
- 2 tsp. Salt
- 1/2 tsp. Pepper
- 2 tsp. Chili Powder
You will also need these ingredients for the sauce that goes on top:
- 2 cups Ketchup
- 1 cup Brown Sugar
- 1/2 tsp. Liquid Smoke
- 1/2 tsp Garlic Powder
- 1/4 cup Chopped Onion
Now that your ingredients have been gathered, combine all ingredients for meatballs and mix well (mixture will be soft).
Shape meatball mixture into round balls. Put into baking dish, single layered.
Combine all sauce ingredients and mix well.
Spread sauce over meatballs evenly with a spoon or spatula.
Bake at 350 degrees for one hour.
Enjoy by themselves or served over rice!
